Maltitol Syrup is a clear, colourless to light-yellow, viscous liquid with a sweet taste — the liquid, ready-to-use form of maltitol (INS 965 / E 965). Chemically it is a hydrogenated starch hydrolysate (HSH): it is made by the hydrogenation of a mixture of carbohydrates hydrolysed from starch, and consists of 50–80% maltitol by weight, with the remainder being predominantly sorbitol and a small number of other sugar-related substances.
Because it is already a liquid, maltitol syrup is pumpable, easy to dose and simple to blend — no dissolving step, no dusting, and fast incorporation into chocolate, candy, syrups, fillings and coatings.
Like maltitol powder, its taste and behaviour come close to sugar: high sweetness lets it be used without blending other sweeteners, and it shows a negligible cooling effect (positive heat of solution) compared with other sugar alcohols — very much like the subtle cooling effect of sucrose. This is why it is a first-choice bulk sweetener for sugar-free chocolate, hard candy, chewing gum, baked goods and ice cream.
Maltitol syrup is more than a sweetener. It is also a humectant, texturizing agent and stabiliser — it retains moisture, adds body and improves softness and shelf life. In syrups its similarity to sucrose means crystallisation is less likely (which can otherwise cause bottle caps to stick). In the pharmaceutical industry it is used as an excipient and low-calorie sweetening agent, and as a plasticiser in gelatin capsules, an emollient and a humectant.

Q: Is maltitol syrup the same as maltitol powder? A: They share the same sweetener molecule but differ in form. Maltitol syrup is a liquid (hydrogenated starch hydrolysate, 50–80% maltitol plus sorbitol and other polyols) — pumpable and dust-free. Maltitol powder is a high-purity crystalline solid (assay 99–101%). Choose syrup for chocolate, coatings, fillings and syrups; choose powder for tableting, dry mixes and gum.
Q: Is it a sugar? Is it suitable for sugar-free products? A: No — maltitol is a sugar alcohol (polyol), not a sugar. The syrup is widely used in sugar-free and reduced-sugar chocolate, candy, gum and baked goods.
Q: How does it taste compared with sugar? A: Its sweetness is high and close to sucrose, so it can be used without blending other sweeteners, and it has a negligible cooling effect — very similar to the subtle cooling of sugar. That makes it a good fit for chocolate, baked goods and creamy products where other polyols taste "cool".
