Maltitol is a disaccharide polyol made by hydrogenating maltose obtained from starch. The product arrives as a white, crystalline powder that, like most commercial maltitol, carries small amounts of sorbitol and related polyhydric alcohols. It is very soluble in water and slightly soluble in ethanol - which makes it easy to dose into syrups, batters and fondants alike.

Sugar alcohols are not interchangeable - each one brings a different mouthfeel, browning and crystal behaviour to the batch. These are the six behaviours that define this particular powder:
· 1. Sweet enough to stand alone. The specification notes maltitol's high sweetness allows it to be used without blending with other sweeteners - one ingredient doing the whole sweetening job.
· 2. Negligible cooling effect. Unlike some polyols that taste cold on the tongue, maltitol exhibits a negligible cooling effect (positive heat of solution), very similar to the subtle cooling profile of sucrose - the detail that keeps chocolate and sweets tasting 'normal'.
· 3. A clean browning story. With reducing sugars at 0.02% (limit 0.1%), there is almost no reducing sugar available to drive Maillard browning - which is why cooked sweets keep their colour and flavour cleaner through processing.
· 4. Sucrose-like behaviour in syrups. Its similarity to sucrose allows use in syrups where crystallization - the kind that makes bottle caps stick - is less likely.
· 5. A precise crystalline fingerprint. Assay inside the tight 99.0% - 101.0% window (measured 99.42%) and a melting point of 149.5°C against the documented 148 - 151°C range give QC a fast, repeatable identity check.
· 6. Four jobs on one label. The specification registers it as humectant, texturizing agent, stabilizer and sweetener - and, in cosmetics-style formulations, as an emollient and humectant.
