Sorbitol powder is the crystalline form of D-glucitol, a sugar alcohol (polyol) made from glucose. On an ingredient label it appears as E420 or INS 420; in chemistry texts you will also meet its synonym D-sorbitol, or the older names sorbit and sorbol. Whatever the label wording, the molecule is the same: C6H14O6, molecular weight about 182.2.
Because it crystallises into a white, free-flowing powder, it handles like sugar in dry mixing — but with a different job description: roughly 60% as sweet as sucrose with about one-third fewer calories, a smooth mouthfeel, and a mild cooling sweetness.
